Killibinbin “Shadow” Shiraz Cabernet Sauvignon

The word Killibinbin is Aboriginal and means to shine and be bright.. We can confirm, the fruit in these wines is bright and the labels do indeed shine! The labels have a common theme of sultry, femme fatale characters from a 1950s film noir thriller.

Killibinbin was established by Guy & Liz Adams in 1997 and is produced at their Brothers in Arms winery in the region. Can you believe that these beauties have never been in the UK before?

Located around 60 kilometres from Adelaide, this is red wine country, pure & simple! Around half of the production in Langhorne Creek is Cabernet & Shiraz, its what they do best. During the ripening period, temperatures in the vineyards can get incredibly hot, but at around 4pm the Lake Breeze kicks which cools the vineyards like an air conditioner being switched on. Temperatures can drop from 35 to 18 degrees within an hour, this ensures a longer ripening period and allowing the natural tannin structure to develop.

Vinification

Having control of the wines from the soil to the bottle gives Guy & Liz great satisfaction. They understand how each parcel of fruit came to be and where certain distinct characteristics may be found. This is invaluable when it comes to blending the wines, building each layer of texture and flavour to create styles which they believe best showcase our estate and the Langhorne Creek region.

The most notable thing about Langhorne Creek is the ability to grow premium quality grapes with a minimal amount of fuss. The climate is warm enough that we dont have to endure some of the cool climate headaches such as devastating frosts, labour intensive canopy management or inclement weather associated with late harvest dates.

80% Shiraz, 20% Cabernet Sauvignon.

Picked between 12 March 22 March 2016 from 100% single estate vineyards of 3 individual plantings.

18 months in new hogsheads (10% French, 5% American), 85% seasoned French Oak barriques.

Tasting Notes

A colour of deep garnet hues with vibrant red fruit aromas of blackcurrant and raspberries complemented with a tantalising whiff of cracked pepper and spice. A rewarding, round mouth-feel of summer fruits and subtle mint accompanied by a gentle yet persisting spicy oak takes you down a road of well-structured and very fine tannins with a lingering finish.

This is a full blooded BBQ wine through and through.
