This splendid tequila is produced from the Blue agave grown in the Amatitan mountains in Jalisco, Mexico. Known as the little devil of tequila, it boasts a creamy body that greets the nose with inviting aromas of vanilla and black pepper. On the palate, you’ll discover dominant notes of rich vanilla, mingled with warm spices and hints of roasted agave, creating a complex flavor profile. The finish is tart and refreshing, featuring bright notes of citrus that linger, providing a long-lasting, delightful experience.
History The 123 Organic Tequila Diablito Extra Anejo is the culmination of David Ravandi’s three decades of expertise in organic farming and distillation. His vision was to produce an entirely organic and sustainable tequila from the mountainous region of Amatitan, where the agave plants thrive. These plants are carefully nurtured for a decade before harvesting, ensuring optimal flavor development. The heart of the agave, known as “the pineapple,” is roasted in a traditional stone oven, releasing its natural sugars and flavors. After roasting, the pulp is extracted to initiate the fermentation process, leading to the creation of several tequila styles, including Blanco, Reposado, Anejo, and Extra Anejo (Diablito). This meticulous approach not only honors the heritage of tequila-making but also represents a commitment to sustainability and quality, resulting in a spirit that is both rich in flavor and deeply rooted in tradition.
