Description
Sauvignon Blanc comes largely from vineyards planted on the Wairau Valley floor, where the climate and free-draining gravelly soils are perfect for the variety. This includes the Estate, Motukawa, Widow’s Block, Red Shed, and Mustang vineyards.
The 2025 Sauvignon Blanc vintage was defined by patience. The season began with extraordinary promise, bringing an exceptional flowering that resulted in the largest bunches in living memory. The ripening process was prolonged, requiring the team to wait until optimum flavour and concentration were reached.
Following the harvest, the free-run juice was cold settled before racking and inoculation with selected yeast. Fermentation was carried out primarily in stainless steel tanks, with almost 5% of the blend fermented at warmer temperatures in large format oak vats. A portion was also fermented using wild yeast to build texture and complexity. Fruit from each vineyard ferments separately before blending, with only 61 of over 80 portions selected for the final wine.
The 2025 vintage is open and expressive on the nose, with aromas of peach, elderflower, makrut lime, and freshly squeezed lemon. The palate is bright and layered with lemon curd and white nectarine, lifted by a refreshing character that recalls a cool sea breeze with hints of sea salt and dune grass. There is a sense of poise, with a refined mid-palate carried by steel-cut citrus acidity and an elegant, lingering finish.
