Conviction 1929 Double Oak is a rare and highly sought-after straight bourbon produced by Southern Grace Distilleries at their historic “Whiskey Prison” in Mount Pleasant, NC. This limited expression utilizes a unique two-grain mash bill of 88% corn and 12% malted barley, matured within the original 1929 prison dormitory to leverage its specific microclimate. After primary aging in new charred oak, the spirit undergoes secondary maturation in a second new, unused charred oak barrel to intensify wood interaction.
Because it is bottled at cask strength with no water added, the proof varies by batch, typically ranging between 95 and 106 proof. The profile is characterized by a dense delivery of dark chocolate, red berries, and light smoke that transitions into a long finish of honeyed oak and sweet char.
