Produced in Ro de Ejutla using Espadn agave, the pias are roasted in earthen pit ovens, crushed by a stone tahona, and double-distilled in copper pot stills. During the second distillation, instead of meat as in traditional Sacrificio mezcals, a basket of pumpkin stems (guas de calabaza), along with plantains, oranges, pineapple, pumpkin seeds, and the native herb chepiche, is suspended in the still.
