Crafted from 85% Assyrtiko and 15% Aidani, the grapes for this Vinsanto are hand-harvested and sun-dried on mats for 1014 days, intensifying sugars and flavor. After gentle pressing, the must undergoes a slow, natural fermentation before aging for at least 4 years in old oak barrelswithout rackingto develop depth and oxidative complexity. The result is a layered dessert wine with aromas of dried fruit, roasted coffee bean, clove, and burnt sugar, with a palate that balances sweetness with a vibrant spine of minerality and aciditya hallmark of Santorinis ancient, volcanic terroir. Serve with blue cheese, walnut baklava, or dark chocolate tart for a transcendent pairing.
