ABOUT THIS WINE

Made from 99% Cabernet Sauvignon sourced from a certified organic vineyard in the Columbia Gorge AVA, Pink Salt gets its name from both its salty character and its subtly copper-rose hue. The grapes undergo an 8-hour skin soak before gentle pressing, followed by native yeast fermentation, full malolactic conversion, and aging in neutral oak and concrete egg on the lees. A dash of Ovums signature white blend Big Salt helps kick off fermentation. No fining or filtration and minimal sulfur are used. The result is a dry, mouthwatering ros with a red wine soulperfect with grilled pork, salmon crudo, or tomato-laced Mediterranean dishes.
