Made using the medieval(!) mizumoto brewing method.
Every year this sake tastes a little different, which is exciting!
This year is fruity on the nose and introduces itself with a pronounced acidity which reminds one a bit of wine.
Bright and sweet in body, notes of apple and melon, with a long and mouth watering finish where the acidity comes back into play.
If given time with this sake, the acidity is no longer surprising, letting the layers sweet and sour unfold carried by a delectable texture. This is a sake to be mulled over and conversed with.
