Expertly brewed by Shiraiwa K.K.s toji in Japan, and meticulously blended by founder and maker Richard Geoffroy, Assemblage 4 is a wine-lovers sake. This once-pasteurized brew is light, focused and supple. Marzipan, mushroom, cherry, violet, even a touch of woodsmoke and vermouth appear like momentary daydreams.
