Eleni and Edouard Vocoret are among the younger generation shaping modern Chablis, farming organically and limiting intervention in the cellar. Butteaux sits within the Montmains Premier Cru on classic Kimmeridgian marl soils that deliver both depth and mineral tension. The fruit is fermented largely in stainless steel to maintain site clarity, with only subtle oak influence during levage. The 2023 shows lemon zest, green apple and oyster shell notes framed by chalky texture and saline acidity. There is concentration but also precision, the finishing long and mineral. This is a superb, textbook – and rare – expression of Butteaux.
