A remarkable wine brought straight to us from the producer, with only 500 bottles being produced this vintage. Fermentation happens spontaneously with wild yeast and without any additives. It spends 4 months on the skins and picks up a rich amber colour from this process, before spending 6 months in a clay qvevri to round out the flavours and tannins. It has bold, intense flavours of ripe apricot, peach and slight tropical notes like pineapple, with a full body, balanced tannins and a long finish. This is a proper orange wine – made with knowledge and love.
Paata, the man behind Aptsiauri, only recently startedsellingthe wines from his vineyard, which has beenin his family for hundreds of years.The vineyard is locatedin the Kakheti Alazani valley, where the Caucasus mountains protect them from the elements. They use the ancientGeorgian traditional Qvevri wine-making method, recognised by UNESCO as an item of intangible cultural heritage in 2013, in which the wine ferments inside a clay amphora that has been buried underground. Paata does not use any chemical additives in the vineyard, and bottles everything unfiltered and unfined,producing complex and flavourful wines that reflect the unique terroir of Kakheti.
