A family steeped in mezcal production history since the 20th century but re-ignited by Carlos Moreno in 2009. Teaming up with 5th generation maestro mezcalero Perdo Hernandez, together they created Koch El Mezcal de Oaxaca with the goal of preserving mezcal culture. This Koch El Espadin is made using ancestral techniques which amongst other things prohibits the use of metal tools. Fermentation is done spontaneously outdoors using sabino wood tubs and distillation is through clay pot stills (Olla de Barro). The resulting product is simply unbeatable.It is the most traditional way to produce mezcal.
