Nito means two hares, and staying true to their company motto of chasing after two unattainable qualities, this sake uses two kinds of rice, Omachi and Yamadanishiki, to achieve a balance of flavors that each tell their own tale. The slightly hazy sake holds a juicy apple aroma that follows on the palate, but fades to an almost spicy dry. The brewers achieved their goal and caught two hares.
