This wine stands out as one of their top favorites to both produce and enjoy. The Counoise grapes were harvested towards the end of a string of scorching 100 days in late August. Carefully, the fruit was placed into a closed-top fermentation tank, sealed, and left to rest for several weeks. Utilizing carbonic maceration, fermentation commenced naturally within the fruit itself, after which it underwent foot treading before being pressed off. Fermentation reached completion in neutral French oak barrels. The resulting wine boasts a light, airy texture with a prominent bouquet. Its vibrant, electric hue adds a delightful visual appeal, matching the joy found in every sip. Best served at cellar temperature.
