An elegant, serious Burgundy that can more than hold its own against wines twice its price. It comes from a tiny 1.8 hectare plot called ‘Les Perrires’, on a favourable aspect overlooking the town of Savigny-Les-Beaune in the prized Cte-d’Or. The pebbly, low fertile soils here, along with the 50+ year-old vines, produce grapes that are naturallysuper-concentrated, with terrific aging potential. The wine hasintense aromas of strawberry, cranberry and rose, with just a hint of spice. We were also impressed by how well developed this wine is already: the 2019 vintage showing complex earthy and savourynotes of forest floor, dried red fruits and figs. On the palate there is a beautiful fresh acidity to offset the concentration of flavours, with silky tannins creating a pleasing weight in the mouth and leading into a long and complex finish.
A lot of effort goes into this wine, especially considering the price… Grapes are sorted at the winery to ensure optimum ripeness, To make this wine, whole bunches are fermented before being placed into wooden fermentation vats. Punching down takes place by foot, so as to prevent the extraction of bitter compounds from the stems and seeds, and then the wine is decanted and placed into oak barrels to mature.Old oak isused in order to preserve the delicacy of the Pinot Noir grape, and to respect the terroir of the individual plot through “finesse and elegance rather than power and over-extraction”. Finally, the wine is bottled without fining or filtration.
Domain Simon Bize is locatedin the AOC of Savigny-les-Beaune and wascreated in 1880. Four generations later, the late Patrick Bize’s wife Chisa and sister Marielle focus on taking care of their old vines without the use of chemicals or pesticides, and making wines in the traditional manner with minimal use of sulphur.
