Whittaker’s Single Malt: 2025 Bourbon & PX

Whittaker’s is a family business run by Jane & Toby Whittaker from Harewell House Farm in the heart of Nidderdale in North Yorkshire.

In the summer of 2018, Toby & Jane embarked on expanding their capacity and decided to build a new distillery building so they could welcome the public through their doors so they could join them on our journey and new projects. The first one being making Whisky, keep an eye out for a very special, limited edition batch coming soon.

Their aim is to produce an artisan small batch, handcrafted spirit which reflects the Yorkshire countryside in a bottle.

2025 Ex-Bourbon & Ex-PX Cask

This delicious 48.8% ABV English Single Malt Whisky combines ex-bourbon aged and ex-Pedro Ximenez aged whisky which gives just a hint of rich fruit. It is a combination of ex-bourbon casks R19, R17, 71, 72 and ex-Pedro Ximenez 47 & 48 all made from Laureate barley. Distillation dates are from January 2021 to July 2021 and bottled in August 2025. This was a small run of only 1480 bottles.

Tasting Notes

Nose: Bright and gristy with a lovely porridge-y note. Some juicy orange & clove.

Palate: Sweet and sour. More lovely, oily malt with ginger snap biscuits and a chewy currant note.

Finish: Sour yellow plum and more gristy spice.
