As the name alludes to, Windchaser’s founder Dave Gifford is a bit of a obsessive windsurfer. This is sourced from an organic dry farmed vineyard in Anderson Valley and it is aged in old barrels. The nose opens with a kiss of oak, white peach, mixed citrus, and a bit of minerality. The palate is moderate in weight with citrus, stone fruits and a just there minerality with a good sense of texture. This would work wonderfully with dumplings from around the world.
